Commercial kitchens rely heavily on their durable, quality appliances. One of the most popular appliances in the commercial kitchen is the deep fryer. In fact, most commercial deep fryers spend the majority of their time in service. If you find that your fryer isn't producing the same quality as it has been, you might be able to figure out why with a bit of troubleshooting. Here are some of the most common problems that can arise with deep fryers.
Pilot Light Problems
If the oil isn't heating at all, it's possible that the pilot light isn't working. If you suspect that you're having pilot light issues, start by making sure that the main gas supply valve is open. If the valve is open and you still can't light the pilot, you might have a clog in your supply line.
Use a stiff brush to sweep any debris from the tip of the pilot light. That makes sure that there's nothing blocking the fuel at the end of the assembly. Then, you can check both ends of the gas hose to be sure that it's connected. Finally, make sure the drain valve is closed. If the drain valve is open, that will override the pilot light and prevent it from lighting.
Filtration Pump Struggles
You should always be able to hear the oil filtration pump running when your fryer is in use. If you can't hear the pump running or visibly see the oil circulating in the filter, it may be due to a problem with the filtration pump.
Inspect the filter pan's O-rings to be sure that they are in place and not leaking. If they look like they're cracked or worn, they may be allowing air seepage, which can affect the air pressure that the pump needs for proper function. Replace the seals and the O-rings to repair the system function. Check the filter on the pump as well, because a clogged filter will hinder the pump's operation, too.
If the oil is getting hot, but not as hot as it should, it could be the burner. Turn the burner knob to adjust the flame underneath. If you can only see flames from one side, or there's visible ports that aren't burning, you may need to clean the burner itself. Turn it off and wait for it to cool until it is safe to touch. Then, brush the surface of the burner with a stiff brush to make sure there's nothing clogging the ports.
If that doesn't fix the problem, you might want to have the burner inspected by a technician or have the pressure in your fuel lines tested. A faulty burner or fluctuating fuel pressure can both cause problems with burner response, so if you're sure it's not clogged, you'll want to rule these issues out, too.
The more proactive you are about troubleshooting issues with your fryer, the less down-time you'll face both between meal services and during service.
